Canning – Course Outline

Intro to pressure canning

  • Why and when to pressure can
  • Safety and how the pressure canner works
  • Preparing your pressure canner

Prep

  • Check, clean and sterilize jars
  • Wash and prepare food to be canned
  • Prepare pressure canner

Fill Jars

  • Fill jars seal and put into canner
  • Importance of headspace and syphoning

Pressure Canning

  • Adjusting the weight to altitude
  • De-pressuring the canner
  • Taking jars out safely

**Clean up & Lunch Break**

Intro to water bath canning

  • Difference in pressure canning & water bath canning
  • Safety and precautions
  • Tools and accessories needed

Prep

  • Check, clean and sterilize jars
  • Prepare canner for use
  • Wash and prepare produce

How to make no sugar added jam

  • How to make apple pectin
  • Difference types of pectin
  • Prepare and can jam

Clean up and go over tips and tricks to water bath canning other products
